For years, Cabernet Sauvignon grapes grown in Lake County’s Red Hills AVA have been filling more expensive Napa Valley wines with equally impressive, though less costly, fruit. Many of the best vineyards up in the Hills have never made a wine that says Lake County on the label. Wineries like Sol Rouge are responsible for the Red Hills landing on our vinous radar. This is a ridiculously good, plush, and complex Cabernet Sauvignon.

It tastes fully ripe, with blackberry and black cherry, plus hints of chocolate and mint. Taste: | Deep stuff. Very generous fruit with a fine tannic backbone that lets it wear the weight well. Liquored cherries with an unmistakable mineral inflection. Delicious now, this wine will evolve nicely over the next decade. |
Finish: | Smooth and bold. It’s the kind of wine that doesn’t leave you hanging for more. Substantial flavors that persist right through the finish. Delicious now, this will evolve nicely over the next decade. |
Pairing: | There’s a dried herb element to the wine that plays nicely with rosemary rubbed meats like pork chops or grilled lamb. It needs a little protein to soften the mountain-grown muscle and tannins. |
