- 0.35 tons of clone 777, and 0.97 tons of clone 828, were hand-picked and fermented together in small vats with traditional punchdowns by hand, and a brief extended maceration. The wine was stirred gently a few times over the winter, but was otherwise left untouched until final blending and bottling – unfined and unfiltered.
