Mission Briefing
The South of France
Today’s Racines de la Terre 2009 Pays d’Oc Cabernet is a great wine for anyone who wants to dip their spy-toes into experiencing French wines. This wine shows a perfect balance between the austere style of French wines and the riper and more fruit forward style of California Cabernet.
The winery is situated to the south and west of Bordeaux, along the gorgeous Southern coast of France. The coastal influence is apparent with each sip. A lovely minerality is imparted from the sandy coastal soils and coastal breezes.
We offer this lovely, light-hearted, food-fantastic wine to you with our very hearty recommendation.
Tasting Profile
Look: | Opaque, deep, and dark with a maroon core and glinting ruby edges. Skinny legs retain the color of the wine as they sidle down the glass wall. |
---|---|
Smell: | A true French Bordeax varietal on the nose, this wine smells like exactly what you’d expect from an Old World wine. Plenty of reduced, stewed dark fruit, with almost a cola note on the initial nose, trailed by lovely terroir notes of cedarwood, tobacco leaf, herbes de Provence, and a slight smoky quality. |
Taste: | A beautiful balance of dark fruit and earth on the palate, with a surprising and pleasant lightness. Braised blackberry and plum mingle with leather, freshly fallen leaves, and hints of aged oakwood, with just a kick of black pepper spice at the end. |
Finish: | Delicious now, but with plenty of room to grow, this wine has a long and lingering finish with well structured with velvety tannins. Throughout the finish, a wonderful sea salt minerality lingers through, hinting at the coastal heritage of the grapes. |
Pairing: | Perfectly seared rosemary and thyme rubbed beef tenderloin, served alongside roasted root vegetables. |
