Optimal conditions
Today’s Romeo Vineyards 2006 Sempre Vive Napa Valley Old Vine Cabernet Sauvignon is a fantastic Cab that will likely sell out well before midnight (California Wine Country Time). Sempre Vive wines have proven to be among our most popular - and, at 60% off, this is an offer that most Operatives will find difficult to resist.
Most old vine wines that are sold in the US are Zinfandel. Old Vine Cabernet Sauvignon is more of a rarity. Old vines produce fewer grapes than young ones and those grapes that do grow on these vines impart a very distinctive character - and a real sense of terroir.
Today’s wine is a delicious, elegant, complex and ready to drink delight; we recommend that you decant in order to unleash its full potential.
Tasting Profile
Look: | Near perfectly diffuse crimson through and through, with just a hint of a lighter red ruby fringe. |
---|---|
Smell: | A wonderfully balanced nose, with equal parts dark fruit, earth, and spice. Stewed plum and black cherry mingle with earthy notes of a fresh forest floor and an aged cigar box, rounded out by dark chocolate, sage, and baking spices. |
Taste: | Elegant and refined on the palate, with subtle dark fruit flavors of blackberry and plum delicately laid overtop hints of espresso bean, tobacco leaf, fresh berry bramble, rhubarb, and black pepper spice. |
Finish: | Once decanted and given a chance to breathe, this wine truly comes alive and is everything you’d expect from a Napa Cabernet - it’s refined, elegant, and absolutely classic in every way, with subtle tannins and a well structured finish. |
Pairing: | We recommend a meal of slowly braised beef short ribs, served atop rosemary garlic mashed potatoes. |
