Tasting Profile
Look: | Super deep, dark crimson throughout the glass, with a lighter red ruby around the fringe. |
---|---|
Smell: | Bold aromas of dark plum and blackberry are framed by hints of cassis, sweet tobacco leaf, nutmeg, clove, sandalwood, black peppercorn, and a touch of espresso bean. |
Taste: | Well balanced and delicious flavors of sweet plum, boysenberry, and a touch of wild raspberry are layered overtop freshly tilled earth, dried fall leaves, pipe tobacco, dark baking spices, and a lovely note of river rock minerality. |
Finish: | This robust wine is best decanted. After it’s been given a chance to open, you’ll be greeted by a very smooth finish, with dark fruit and spice flavors that linger through the long finish. |
Pairing: | Beef short ribs, braised with fresh bay leaves and a tamarind balsamic glaze. |
