Today’s Pahlmeyer 2011 Jayson Napa Cabernet Sauvignon is a stunning wine. No wonder, as the grapes for this wine were sourced from three very impressive vineyards. The Stagecoach, Waters Ranch Vineyard and Rancho Chimiles vineyards are some of the most expensive, most sought-after sources in the Napa Valley. Cabernet grapes from these vineyards command a real premium. In our opinion, the price is well justified. Today’s wine is a real treat!

Look: | A vivid, dense ruby hue. |

Smell: | Toasty oak, abundant red fruits, baker’s chocolate, pretty floral tones. |
Taste: | Generous and ripe Cabernet Sauvignon flavors with kirsch, cacao, cedar, and grilled bread. Lots of berry and plum. Fleshy and delicious! |
Finish: | Great texture and depth of flavors that last 20-30 seconds on the palate. It’s a big wine, but very approachable. Tannins are smooth. |
Pairing: | The generous flavors and texture allow this wine to play well at the table, or solo. Red meats work well, but are not mandatory. Hard cheeses, grilled portobello mushrooms, 72% cacao chocolate, a burger, or movie night all sound equally promising! |
