Wow, wow, wow! Today’s Juslyn Vineyard Company 2008 Spring Mountain District Estate Cabernet Sauvignon is a truly stunning wine that is a near-perfect high-elevation Cabernet.
The depth of the fruit notes on today’s wine immediately grabbed our attention. As opposed to fresh or reduced fruit notes, today’s wine has a deliciously unique hint of pan fried plum and blackberry - slightly roasted with just a touch of darker, sweeter caramelization.
Deep, foreboding crimson, with shoots of deep purple through and through.
Deliciously bold and richly layered, with rich high-elevation fruit notes of dark black cherry and Santa Rosa plum joining lavender, gravelly minerals, sweet tobacco leaf, dark chocolate, and fresh rosemary.
Simply put, stunning. A very serious, and seriously delicious, tasting profile, with pan fried sweet plum and blackberry mingling with sweet tobacco leaf, sandalwood, lightly roasted coffee bean, and cocoa powder.
Best decanted, today’s wine is a true high-elevation stunner. The silken finish is highlighted by fantastic structure and a lingering note of minerals.
