Look: | Dark crimson. Opaque. |

Smell: | Rich fruit aromatics with tea incense and the signature savory scent of Carneros Pinot Noir. Ripe, juicy, and of the earth - and San Pablo Bay wind and fog. Impressive perfume. |
Taste: | Deep, dark, and cherry-laced with mocha-mushroom umami, rose garden essence, cran-pomegranate, cacao, mint. Multi-dimensional taste. 110% legit Carneros Pinot Noir by the standards of any decade. |
Finish: | It’s a young wine now, but delivers abundant pleasure at this point. There are tannins within that suggest a nice ride in the cellar of up to a decade. Saturated and very fine indeed. Extremely delicious Pinot Noir that’s built to last. |
Pairing: | The case could easily be made for Chinese roasted duck, as a greasy bird rinse. Or, also fun is David Chang’s Bo Ssam recipe. Good for the mountains apres ski. Grilled wild salmon. Winter mushrooms of the Pacific NW. Bacon. |
