Today’s fantastically delicious 2011 Santa Rita Organic Reserva Cabernet Sauvignon has a lush, warm nose full of aromas of blackberry, black cherry, plum compote, cassis, cedar, cracked black pepper, dried wild mushrooms and a hint of pipe tobacco. On the palate, it is richly layered and deeply flavored, with dark stewed fruit of mixed dark berries, plum and dried mission fig. These sit directly atop toasty oak, spice, cocoa dust, black pepper and tobacco leaf.
This wine is great right out of the bottle, but it really shines with just a few minutes of decanting or hearty swirling. It softens on the palate, while retaining its bold, complex and gorgeous character all the way along.
