Mission Briefing
The Dog's Meow
You might not know it from the label, but today’s Barking Dog Vineyard 2008 Napa Valley Merlot is a serious Merlot. It is also a seriously delicious Merlot, made in a very Bordeaux style.
This wine is very aromatic, bursting with aromas of black and red fruits that intermingle with earth, spice and woodsy components. On the palate (did we mention that the wine is delicious?), it is plump and ripe and abounding with flavors that closely mimic the nose.
As for pairing with this wine, we recommend nearly anything! This Merlot is extremely food friendly. We’ll be enjoying ours with a juicy grilled beef burger with bacon, mushrooms and cheese!
Tasting Profile
Look: | Slightly inky dark crimson, with a wide ring of pure garnet that encircles the wine. |
---|---|
Smell: | Aromatic and lush with bold black cherry, plum and blackberry in the lead. These aromas are followed by sweet spice, smoked meat, oak and a hint of white pepper. |
Taste: | Cherry and plum reduction with black cherry juice, dried cranberry, dark chocolate, savory spice, tobacco, bramble and subtle white pepper. |
Finish: | Very long, with dark fruits gradually relenting to spice, oak, white pepper and mineral elements. |
Pairing: | A grilled…. anything would be great with this wine. A great steak or a gourmet beef burger come to mind. Yum! |
