Today’s Super Spy Sunday Selection is an aromatic, flavorful Syrah that is an aged to perfection beauty that our entire tasting panel is crazy about.
This wonder of a wine was made by Cécile Lemerle-Derbès, who is the former winemaker at Opus One, Champagne Bollinger, Champagne Jacquart, Schug Carneros, Korbel and others.
Absolutely gorgeous on the nose, with aromas of smoky cherry, pomegranate, cherry bark, black cherry, dried cranberry, red currant, leather, Kentucky tobacco leaf, black licorice, spice box and dried fall leaves.
This aged-to-perfection wine presents a lot of fruit, with flavors of black cherry, grilled Bing cherry, baked cherry tart, spice box, subtle pencil shavings and a hint of cracked peppercorn.
This balanced wine is a wonderful and very flexible pairing companion. Just about any dish with red meat, pork or chicken will work. Even heartier fish dishes would work wonderfully.
