Ty Caton has been a Wine Spies featured winery since 2008. In that time, we’ve featured dozens of Ty’s wines. Today, we have the pleasure to showcase his fragrant and crisply delicious Ty Caton Vineyards 2016 Sonoma Valley Sauvignon Blanc. This wine was the hit of our recent tasting panel, and we’re certain that you’ll love it, too.
This Sauvignon Blanc has an iridescent straw hue with a peridot tinge. Here you’ll find a clean, fresh nose with alluring notes of lilac and peach. The fresh scent of Ulster fragrance mingles with subtle tropical fruit of mango and pineapple. The palate is gorgeous with tropical fruit and stone fruit, instead of your typical grass and citrus. Wonderful flavors of peach, mango, lychee, and guava abound with nice limestone minerality backing. Usually, this kind of fruit requires bright, sometimes sharp, acidity to drive it. This wine has a beautiful softness, with bold edges that have been rounded out until silky smooth. It would be particularly nice with the traditional coconut milk and lemongrass Thai soup, tom kha.
