This Napa Cab is dense and brooding in the glass, with an almost black heart with a thin ring of garnet at the edge. It boasts a complex and varietally-correct bouquet with deep notes of plum, cassis, maraschino cherry, leather, and pipe tobacco. It follows through marvelously on the palate with expansive flavors of plum and blackberry compote, cigar box, fig reduction sauce, and leather. Young Ridge continues to impress us with superbly balanced, approachable and complex wines. If this is anything like their other wines, it will hold up for a decade to come. Spare no expense: Go for the filet mignon. Preferably wrapped in bacon.
