Our most popular Ty Caton wine of all time was the 2014 Winemaker’s Cuvee. Today, we’re thrilled to be featuring the brilliant update to that great wine, in the form of Ty Caton Vineyards 2016 “Winemaker’s Cuvee” Cabernet Sauvignon. This young wine is ready to drink, but you’ll want to hold a few bottles as this wine will only get better.
This Cab blend is bright scarlet at the center with a shocking fuchsia hue at the meniscus. The nose is very dense, and you should allow it to open up - you’ll be rewarded with aromas of violets, strawberry, red beet, tomato leaf, and rye. It’s got equally densely layered flavors with cocoa and coffee beans up front folding in with vanilla, cassis, and currants. This wine is tremendously age-worthy with solid tannin that will develop beautifully for years to come. Serve this bottle with a proper three-course meal - soup, entree, and a cheese course for dessert - and watch how the wine changes over time.
