We’re in GEVREY! The more famous crown jewel village of Grands Crus in northern Côte de Nuits.
No compromise on legacy with roots in the universe of the grandmaster of all: Henri Jayer per Decanter “dubbed the ‘godfather of Burgundy’ after pioneering a range of key innovations in the region… his silky Pinot Noirs have grown increasingly rare, creating a cult following among collectors and connoisseurs alike.” Jayer, in essence, is pure mythology. Decanter added, just half a decade ago “last bottles from Henri Jayer cellar sold for $35 million” making DRC look like Kool-Aid on the fine and rare auction block.
Practically any wine from any winemaker schooled by Jayer is not only rare but also impossible to keep in stock. Guillon - named Winemaker of the Year in 2020 by the venerable Guide Hachette des Vins - was quoted: “The vinifications are spread over four weeks to obtain structure. Breeding has a particularity: the use of 100% new wood. You must use very dry wood and grains that are well suited to different terroirs. Henri Jayer gave me a lot of advice, ‘My little guy, there are no great wines without new barrels!’ he guided me.”
With that guidance, today in all of Burgundy only DRC and Hospices de Beaune purchase more new oak barrels than Guillon. But that alone does not explain how this Gevrey-Chambertin is such a beauty. The 2019 red Burgundies share an “instant crush” appeal: falling in love at the first whiff or sip is akin to a first kiss. “Jean-Michel Guillon described 2019 as ‘one that was hot and very dry yet somehow managed to give us wines of freshness and minerality that preserve underlying terroir distinctions. We picked from the 19th to the 27th of September and the good news is that the fruit could not have been any cleaner. The bad news is that yields were down about 40% compared to a normal vintage. What is interesting is that while both 2018 and 2019 were very warm vintages, 2019 is more homogenous and has better pHs as well. Stylistically, the 2019s remind me of the 2016s with perhaps just a bit more stuffing.’ As the scores and commentaries confirm, I was impressed with the quality. From Les Crais and Les Murots, there is exceptional richness to the opulent broad-shouldered flavors that firm up immediately on the youthfully austere, detailed and impressively persistent finish (tasted January 2021.)
